Homemade macaroni and cheese - yummy! Heavenly! I love that! :P

I'm just making a creamy tomato pasta bake with grated cheese yum. The cheese in question is mature cheddar :)

I love a good Stilton cheese, served with nice crackers. I like a brie with pesto as well.

Red Leicester cheese for me, please. A bit of camembert wouldn't go astray either.

I also love haloumi, it's a weird cheese from Cyprus.

» Haloumi-Style Cheese «

It is an unusual cheese that has mint leaves incorporated into it after it has been boiled and folded. The cheese has a pleasant, refreshing taste and a firm texture. The product originates in the Eastern Mediterranean region, but is now popular in many regions all over the world. It is usually stored frozen. Pieces of Rich Cow brand Folded Cheese with mint can be packed either in individual packages or in brine with bulk pails. The cheese has a six month refrigerated life after having been thawed.

Country: Eastern Mediterranean
Milk: cow milk
Texture: hard

Cheese, I am a Cheese aholic. I can`t really think of a cheese that I don`t like, with perhaps the exception of Limberger and even in very small doses I can manage to eat it. I`ll have some cheese with my cheese please.

We get a 7 yr. old cheddar from Quebec that is awesome! I love it on apple pie! Or with a good dram of scotch! I could eat a whole brick of Havarti by myself. Mind you, I could do that with most cheeses. I think our last grocery shop consisted of about $25.00 in cheese alone. :)

Sorry it's taken me so long to get round to replying to this thread - I'm a complete cheese nut!

I especially love brie, camembert and cheddar... they're my 'big three' - but I love other speciality cheeses too. :)

I don't know what I'd do without cheese - being a vegetarian, it's one of my main foodie pleasures. ^_^
...and in the end, the love you take is equal to the love you make.

I'm still trying to figure out my homemade Macaroni & Cheese recipe, folks. I just kind wing it when I make it. You make a basic white sauce( flour, butter,& milk), add a ton of Cheddar, & 1/2 a ton of Mozza (to make it stringy), & add to cooked macaroni. Put it in a casserole dish, top with more Cheddar, & some Parmesan or Provolone, & bake for 10-15 mins. I've also added, at times, cubed pieces of real ham, & for different flavor, try a different cheese. Like Swiss, whatever moves you!

I've never met a cheese I didn't like. It's one of life's guilty pleasures, as I can't just eat a little. . . I try to justify eating it by slicing it into very thin slivers. Only problem is, I never stop slicing until the WHOLE block is gone!!! :o :o

I also love it with a nice cold glass of champagne or a good red wine. In fact, I'm going to the 'fridge right now. ;)

Why?

See Scottycat that is the beauty in paper thin slices. Everyone knows they have no calories. As long as you continue to slice thinly you can eat the whole block without fear.

P.S. the same is true for cookie crumbs and cake crumbs, so eat up.

This is also true of anything eaten over the kitchen sink, after midnight. Well, it's midnight somewhere, where's my cheese slicer?
I actually just finished a plate of nachos with 3 yr. old cheddar, & Bella Lodi Parmesan on them. With low fat sour cream, & home-made salsa that my sister-in-law makes. YUM!!!   :innocent:
