Tried this & was delish; This incredible recipe is straight from Domestic Affair. "Lentils tend to be easier to digest than chickpeas. They also cook up a lot faster. This variation from your standard hummus makes a great spread for sandwiches, burgers or falafels, or as a veggie dip." I tried it and love how smooth and creamy it turns out, and tastes very subtle while having a good hummus quality. 1/2 cup red lentils, rinsed really well 1 1/4 cups filtered water 1/4 cup sundried tomatoes 1 tsp ground cumin, lightly toasted 1/2 tsp turmeric 1/2 tsp sea salt 2 Tbsp flaxseed oil or olive oil 2 Tbsp tahini 2 cloves garlic, chopped cayenne pepper or paprika to taste Place the lentils, sundried tomatoes and water in a small pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until tender. Uncover and allow to cool for 10 minutes. Then stir in oil, tahini, garlic, cumin, turmeric and salt and puree with a hand-held blender, or scrape everything into a food processor and blend until smooth. Adjust seasonings to taste. Transfer to a serving bowl and drizzle with a olive oil or flax oil, and sprinkle with cayenne or paprika. Chill in the fridge until ready to serve. Store in an airtight container in the fridge for up to five days. Makes about 1 1/2 cups. VARIATIONS Don't want to use sundried tomatoes? Replace with 1/2 cup roasted red peppers (homemade, or the kind you can buy at a deli or in jars), or 1/2 cup chopped artichoke hearts (home cooked, or you can use marinated ones, or the kind that come canned in water -- drain) and reduce the lentils' cooking water to 1 cup. Puree along with the other ingredients.

Sounds good. I'll have to try it. Hopefully, I can find the Tahini, I didn't know what it was and had to look it up and learn more about it. |

I made this this past week. I went to the store and got the red lentils and the tahini sauce. I was looking over around the hummus (near the fancy cheese) for the tahini but wasn't finding it then a store clerk found it for me and showed me it was on the top shelf above the peanut butter, jarred just like the peanut butter. By itself it's a little strong but I added honey for a sweet spread. Also, I was in the bulk bins and started to get dried tomatoes (it didn't say 'sun' dried but dried) but the smell that met my nose was not a pleasant one and so I opted to get a red bell pepper. Then the day came to make it and I was a bit upset to find that my jar of ground cumin was no where to be found. I was hungry when I got started so I thought I'd make double the red lentils and eat half of it and use the other half for the spread. When I started measuring in the lentils I found I had just a little over two cups and thought 'What the heck I'll cook it all'. I'd poured in a bit of water and then decided to fill my pitcher again (which filters water) and in the meantime I observed that the beans had all stuck together like they were glued it was strange. Eventually, the water filtered through and Id it to rinse the beans (a couple times) and I was able to break them up. Then I added some water and got them to cooking. I came back here to my computer and looked and realized I should have had the roasted bell pepper added with them. I let them cook a bit more then went and roasted my bell pepper which at that point I'd cut in to strips. After broiling the bell pepper for 10 minutes I chopped it up and added it to the lentils and let them cook for a bit more. Then I took half of that and put it in a bowl to eat and the other half to the blender along with everything but the slightly toasted ground cumin. It came out a little thin I thought and I realized I hadn't been following exactly. I should have left of some of the juices that went into the blender but it was okay. I added the last of my flax oil which measured out exact. I've had it several times but if I ever do it again I want to follow it better and have the missing cumin added. I realized later I'd left my cumin at a family member's house over the holiday's because they wanted tamales and that was an ingredient. |
