Some islands are white, thats unclaimed and done on purpose. No ones conquered them yet.
Europe Henry the Navigator dies during the siege of Ceuta (1415), being the major sponsor of the colonisation of Africa that would've made portugal explore the world. Instead Portugal becomes insular, and in 1465 Isabella of Castille marries Alfonso of Portugal instead of Ferdinand of Aragon, bringing the Portuguese-Castillian thrones into a union. Aragon plots with the vassals of Isabella to stop the union and invades but the war backfires and Iberian Aragon + Majorca is annexed in return. The King of Aragon flees to his Mediterranean island territories and sets up as King of Naples.
The French suffer a tax rebellion after they try to raise money to fight the English, and the French authority collapses. England wins the hundred year war, and takes most of northern and western France. Brittany is never annexed by the French, as the mad war never occurs. However soon after the brother of the King of England claims Aquitaine and wins, while Toulouse falls free as an independent in the following chaos and the Valois dynasty of former France flee to Provence.
Burgundy meanwhile grows in power, not being subsumed to France due to it's demise. Scotland, unable to assist France, takes advantage of the english distraction battling the king's brother in Aquitaine - agreeing to a confederation with Ireland and buying Orkney off the Norwegians.
The Kalmar Union loses Sweden, but Denmark decides to drop its attempt at reconquering Sweden and instead focuses on consolidating Norway and Holstein. It engages in a war on Hamburg and then later Mecklenburg, seizing both. Meanwhile in Burgundy, Mary the Rich doesn't marry Maxmillian von Habsburg (who never exists in this timeline) and the Habsburgs never inherit the low countries. Instead, Mary marries -insert neighbouring country in HRE-, and the kid inherits both.
Eleanor of Portugal never marries Frederick III, as Portugal has no need of such a marriage by this time ruling all of Iberia. Maxmillian is not born, instead his father marries another woman and they fail to have heirs. The Habsburg dynasty is inherited by Sigismund of Further Austria, who was renowned for bad judgement and being easy to sway. He fails to be elected Holy Roman Emperor after his cousin Frederick's III death and the Habsburgs are left with just their Austrian lands after the Swiss Confederacy seizes their Swiss lands. Sigismund wastes away the family fortune and dies without heir, resulting in the split up of the Habsburg's lands.
The Imperial Diet of the HRE is never formed, and the empire begins a slow decline. Taking advantage of this, the Swiss Confederacy - seeking to secure itself from the growing power of the Burgundians, progressively conquered various fragmented states in modern Milan, Parma, Lombardy, Liguria and Savoy - slowly consolidating their control of the area.
The Papal States, Naples and Florence remain mostly stable, free of the French and Austrians and with Genoa destroyed by Venetians and Swiss, the old merchant state rivalries ended.
In Russia, Polish-Lithuania and Sweden assists Novgorod against the Grand Duchy of Muscovy, saving Novgorod from Muscovian annexation for the most part. While Moscovy manages to seize other sections of Russia, it is unable to secure the rich Novogorod and never reiches the heights of power it might have otherwise.
The Thirty Year War never happens, Prussia remains Polish. The Holy Roman Empire formally collapses in the 1600s as Burgundy, Denmark and Switzerland push further into its old territories, with Burgundy demanding its disestablishment with the motive of moving further into its territory and wishing to break the historical connections of the small german states. Meanwhile the Ottoman Empire rises. Burgundy takes Oldenburg and Bremen, as well as much of Hanover in war and inherits Wurtenberg around this time.
Ottomans spread into Moldova and the Crimea, the lack of a unified Russian or Habsburg state letting them crash through into the Balkans and Vienna is pillaged, until the Ottomans are forced back by an alliance of the Adriatic states, but not before it's seized significant territory in Europe and the Mediterranean. In the other direction they also move into Arabia, pushing back the various independent states and eventually forcing the Sheikhs of Arabia to form a tribal confederacy to hold them out of what remains out of Ottoman hands.
Iberia regains it's exploratory interests around 1600 upon news of its neighbours discovery foreign lands, but just to late to be the 'first' out the gate. Denmark, Scotland and Brittany have all claimed foreign lands by this point, soon after Denmark discovers the coast of Canada, and the secret leaks - leading Scotland to send an expedition soon after. The Rush for America begins, though some Europeans decide to go the other direction and head down the side of Africa. At this point, Burgundy takes advantage of peoples foreign distraction to seize Provence.
England joins the race for America not long after, nearly coming to blows with Scotland as a result. Britanny reaches Central America, and comes into conflict with the Aquitaine in South America, who end up ceding much of their own colonies to Britanny. The Iberians meanwhile round the Cape of Good Hope and land in Madagascar, which they will later gain as their own.
At this time the Ottomans begin a push into North Africa, taking the lower half of Tunisia and Tripoli. The Mediterranean states, fearing a Ottoman conquest all the way to Morocco, try diplomacy with the muslim states of the area but negotiations disintegrate and Naples, Iberia and Switzerland intervened directly to capture parts of north africa before the Ottomans. The Ottomans invaded Naples in return, seizing Malta but failing to capture Sicily or the mainland when the Papal States and Florence assisted to keep them out of Italy.
The colonial age gets into full swing by now, with european colonies popping up across Africa and the Americas.
Asia In Asia the first divergence takes place in Indochina; here the Ming agreed to invade Vietnam on request of the disposed le dynasty, instead of accepting the mac dynasty. They win after several years of war and set up a puppet king of the le dynasty.
This leads up to a later event, where in the 1590s Japan leads an invasion of Korea and China. They conspire with the le dynasty, who are resentful of Chinese rule, and agree to attack while Vietnam (which has now expanded its power across most of Indochina via various wars under Chinese leadership) will revolt at the same time. The result is a decisive loss for China in the Imjin wars, where Japan acquired the Ryukyus, Taiwan and Korea, as well as parts of the modern russian far east. While an actual invasion into China comes to a stalemate, Japan comes out of it well with significant gains. The Ming dynasty begins a spiralling collapse, and loses the majority of the non-chinese ethnic lands on the steppes to the opportunistic Mongols, who take the opportunity to expand.
Tibet meanwhile avoids a decline, when the weak would've been 6th Dalai Lama never recovers from a bout of childhood sickness and dies. His replacement rules well, managing to consolidate the Tibetan lands.
The Ming fall prey to other dynasties, but china as a state manages to hold on to the remainder of its territory through to modern times, entering a prolonged period of isolation out of an attempt at self-preservation.
Next we have Persia; here Shah Abbas I the Great of Persia has no need to fight the English or Portuguese, neither of whom have reached the middle east. Instead Ottomans secure an alliance with their muslim neighbours the Persians at this time via royal marriage, the Ottomans intending to focus on Europe and wanting peace at their back door.
The Persians decide to focus on eliminating the Uzbek's, who they decisively crush and acquire the Uzbek lands around the Caspian Sea. They acquire Bahrain and Qatar off the Arab sheikhs sometime here.
Around the late 1500s the Europeans reach Asia, with gusto. Iberia conquers the Philippines and Maldives not long after it discovers them, while the Danish - playing a game of catchup - manage to secure rich indian lands and Sri Lanka. At this time, the Mughal Empire begins its decline following a Hindu revolt. The result is catastrophic, as its neighbours and the newly arrived europeans take advantage of it. Nepal, Sikkim and Bhutan, nominally under Mughal lordship, secede, Persia pushes into Afganistan, Indochina into Bengal, Tibet into northern India, and their allies in the Maldives, Sri Lanka and the southern Indian states are conquered by Europeans.
By 1800 the remains of the Empire have dissolved into various independent states.
The Vietnamese and Japanese lead wars of conquest under prosperous governments respectively, gaining various territories in SE Asia. Australia is reached by british colonists in 1700s, and will later experience a anti-european surge that leads to much of it gaining independence.
Africa+Americas The colonisation of South America goes well for the most part, until the Europeans hit the Incas. Having arrived to South America later than in the real world, the Inca's are given time to have centralised and modernised. Britanny began colonising Central America and the upper reaches of South America several decades before, and various European weapons managed to slip through their hands and make their way to the Incans via the trade routes. Additionally, the europeans don't arrive in the middle of a civil war as they do in the real timeline, and smallpox filtering down from Central America has already been recovered from.
The end result is that by the time the British reach the Incan Empire, it has expanded tremendously and stands as a serious foe. The initial diplomacy fails, and the fact that most of europe is chaotic and ununified, with less resources, leads to an Incan win in an attempt to invade, and after twice more trying they are forced to concede the Incans sovereignty
Enter the modern era. The idea of nationalism spawns in south africa, where the people revolt against their colonial masters and establish a greater boer state. The idea spreads quickly, and the America's suffer their own similar revolt soon after which a disunified american state forms out of the colonies. Several african states form the same way.
Where details are vague, its on purpose to let people fill in the holes themselves.

What does my "empire" entail? I need to know so I can get my empire pop. I'm would like to have at least Brittany in my "sphere" if anything. I would also like Toulouse. Originally Toulouse. Brittany, and Burgundy were in my sphere, but Burgundy... yeah... they're big.

That'd be like the Germans vs England They still lost, even though the UK was one piddly island chain with a huge colonial empire.
Flo, your empire consists of much of South America, Florida, half of Australia, a strip on the side of India, and some bits in Africa.
PS: Toulouse also has significant colonies, in Africa, the Caribbean and South America.
PPS: Just to clarify, the lavender bit on the coast of africa near Madagascar is Florence's, not the Middle East Confederacy or Toulouse. Just noticed their similar colours.
